Things to make in a mug!

Threadspinner asked about my favorite recipes, so here’s one!
 
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa powder
1 pinch salt
1  egg
3 tablespoons milk
3 tablespoons vegetable oil
Mix together egg, milk, oil in the mug FIRST. Most recipes won’t tell you to do this but I find it works best. Then stir in flour, cocoa, and sugar, mixing well between each ingredient or you get lumps. Add in cinnamon, pumpkin pie spice, chocolate chips, rum, coffee powder, and/or or a dash of vanilla to taste. 
Microwave for five minutes! The result is a dense, spongy, somewhat dry chunk of cake that you can bolt down piping hot to sate your chocolate addiction. Beats the shit out of hot chocolate. I’ve been trying to figure out a way to get it moister but so far no luck.

5-Minute Brownie



4 Tablespoons Flour
4 Tablespoons Sugar
2 Tablespoons Cocoa powder (Note: don’t use cocoa mix or quik, it shouldn’t have any sugar)
2 Tablepsoons Vegetable Oil (Don’t use one with a strong flavor, eg olive, sesame, etc)
2 Tablespoons Water
Dash of salt

  1. Add the sugar, flour, cocoa, and salt to the mug and mix. Then add the oil and water and mix the dry and wet ingredients together. Be sure to be thorough, there’s a tendency for clumps of the dry ingredients to form
  2. Microwave on high for roughly a minute. You may have to microwave it longer or shorter, depending on your microwave, but the brownie should still be wet in the center when done.
Lemon Cake

1 small egg
4 tbsp of milk
3 tbsp of corn oil
2 tbsp of lemon juice
4 tbsp of sugar
4 tbsp flour
1 tsp of baking powder

Put the egg in the mug and stir well with a fork

Add the oil, sugar, milk and the lemon juice and mix well

Add the flour and baking powder e stir till the mixture is smooth

Put in the microwave at full power for 3 minutes

90 Second Nutella Chocolate Cake

  • 1 tablespoon Nutella
  • 1 egg, beaten
  • 1 heaping tablespoon flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon cocoa powder
  • 1 tablespoon brown sugar
  1. Whisk together all ingredients in a bowl until well combined.
  2. Pour the batter into two greased ramekins or one large grease microwavable bowl or mug.
  3. Microwave on 70% power for 30 seconds. At the end of the time, check for doneness (and volcano-ness!). If not cooked through, add 15 seconds at a time.

One Minute Peanut Butter Cake

  • 1 egg, beaten
  • 1 tablespoon brown sugar
  • 1/2 teaspoon baking powder
  • 1 heaping tablespoon flour
  • 2 tablespoons peanut butter
  • 1 teaspoon milk
  • 1 tablespoon powdered sugar (give or take)

  1. In a small bowl, whisk together egg, brown sugar, baking powder, peanut butter and flour.
  2. Pour batter into a greased ramekin. Microwave for 30 seconds.
  3. While the cake is microwaving, stir together milk and powdered sugar, adding more powdered sugar if necessary to thicken frosting.
  4. Remove cake from ramekin (or don’t), pour frosting over top.
  5. Enjoy!
Chocolate Peanut Butter Cake

1           egg

1     T     peanut butter, smooth or chunky

2     T     milk

2     T     oil

1/8   t     vanilla extract

1/8   t    baking powder

4     T    sugar

2     T    unsweetened cocoa powder

4     T    all-purpose flour

  1. If needed, prepare the mug by coating the inside lightly with cooking spray. I say “if needed” because the source recipe states it, but I went without and was fine. I ate my cake in the mug though so I suppose if you’re going to flip out your cake you may want to spray it to ensure a smooth transition.
  2. In a small bowl, beat egg first with a fork then add the other liquid ingredients. Then, slowly add the dry ingredients, whisking throughout, until all clumps are gone.
  3. Pour the batter into the mug (do not fill more than halfway) and smooth the top with a spoon. Thump the mug firmly on the tabletop several times to remove excess air bubbles. Place mug on top of a microwaveable small plate and place both in the microwave.
  4. Bake for 3 – 4 minutes. Check the cake by inserting a toothpick in the middle. If the toothpick comes out dry, the cake is done.
  5. Let the cake cool for at least 2 minutes before either frosting or removing.

Peanut butter and banana cake

    about 1/2 cup all-purpose flour (1/2 large mug)    2 to 3 tablespoons sugar     pinch salt    1 teaspoon baking powder    1 tablespoon water    1 tablespoon oil (I use canola oil)    1 tablespoon mashed banana    1 fat teaspoon peanut butter (I use crunchy)    1 teaspoon vanilla extract    1 teaspoon cinnamon, or to taste

1. Add flour, sugar, salt and baking powder to mug.  Mix.  2. Add water and oil. Mix. Mixture should be liquid-ish. You may need to adjust liquids. Add banana and peanut butter. Mix. 3. Add vanilla and cinnamon. Mix. Take your mug to a microwave for 3 minutes. The cake will have a pale color once the 3 minutes are over. Fact: don’t get fooled if you think that the cake is not ready yet, it is ready!
